If you want to take your meals to the next level, try working with flavoured oils. They're not exactly easy to work with; they're not sweet, sour or salty on their own. But if you're in the mood to experiment or already know what to do with them, you won't just abandon these high aromatic notes.

Marigold oil is good in lots of savoury and sweet dishes. It works best with dairy products, but will also enrich a meal with chicken or fish. It can also be added drop by drop to the pan when roasting meat and vegetables.

You won't miss this kind of cricket in the woods. It grows in abundance and its scent spreads far and wide. The sweet taste is similar to tonka beans or almonds, thanks to a substance called coumarin. Gentian soothes and improves sleep. Caution - do not confuse it with marigold, which looks similar but does not taste the same.
